I’m right here, happily harvesting my first Kabutia squashes of
the season, and get ready because the butternut
squashes (ancos) are coming next! They have a lovely
semi-sweet flavor, but what I love most is that
vibrant color that makes every dish look amazing.

I’ve already started prepping this one: I cut a piece for my grandmother so she can make some soup. In a few days, once the cold really sets in, I’m waiting for the Kabutia plant to dry out completely. I’ve already let my neighbor know so she can harvest hers, and then I’ll clear the land and remove the old plants. The funny thing is, I keep finding more squashes every day... we’ll see what the final count is!
